The curly laganelle take their name from the Apulian term “làgana”, which means puff pastry, and therefore the laganella is nothing more than a smaller pastry. Mafaldine, on the other hand, is a homage to Queen Mafalda of Savoy, and the wavy edge is reminiscent of the lace that in past times were the ornament of the precious robes of ladies and queens. The preciousness of her name sees her protagonist of very rich dishes.
