The Schiaffoni arrived in Puglia thanks to the workers of Campania who, every year, came to the Tavoliere for the wheat harvest season. It was one of the pasta shapes of the poor: they were large and few were enough to fill the dish. They take their name from the Neapolitan dialect “pàcchero” which means slap, like the sound they emit when you pour them into the dish. Since then, in Apulia, they have undergone several misspellings and name adaptations.
