Troccoli, or Pasta alla Chitarra, are a particular pasta format typical of our Land of Puglia. They are similar to spaghetti but thicker and rougher, with a section in the middle between the round and the square. Their realization, according to tradition, is due to the use of an ancient kitchen tool: the “troccolaturo“, a kind of rolling pin equipped with circular blades used to work homemade pasta.
